The Opportunity

Job Title: Executive Chef

Working ConditionsTypical work hours for this position are 7:00 – 3:00 Monday – Friday (Variable according to business levels)

 

Mandate

The Executive Chef will oversee the operations of the well-established Castle Café, with the primary goal of providing a range of high quality, nutritious meals to our students, staff, and guests, and contributing to an overall positive dining experience for all patrons (and the toughest food critiques of all – kids!). Responsible for developing menu offerings, the successful candidate will have the daily opportunity to utilize their culinary creativity and skills to maintain the Café’s reputation for amazing, from-scratch dishes.

Reporting to the Executive Director of Finance & Corporate Service, the Executive Chef will work closely with other internal departments and external suppliers to ensure a safe and efficient culinary function.

Key Accountabilities

Leadership:

  • Provide leadership, manage, support, motivate and prioritize distribution of tasks within Food Services team.
  • Take initiative to implement improvements or alternatives by evaluating organization outcomes that align with the organization’s and department’s strategic plan that meets or exceeds customer expectations.
  • Lead and/or support budget preparation, coordination and analysis.
  • Ensure compliance with regulatory requirements.
  • Lead, maintain and review safe practices in their respective area to ensure employees are performing their duties in accordance with applicable legislation, Board Policy and organizational procedures.
  • Demonstrate commitment and adherence to our performance appraisal framework ensuring support of performance and growth areas of direct reports through meaningful conversation, relevant and timely feedback, and collaboration on the completion of annual portfolio and professional growth plans; all of which aligns with the individual’s respective Quality Standard.
  • Demonstrate commitment and adherence to all People & Culture reporting requirements as they relate to the performance appraisal framework.

Organizational:

  • Prepare, cook and present food daily alongside Sous Chef and Food Services Assistant.
  • Ensure consistency of presentation, production amounts and portion control as per Canada Food Guide, AHS and guest needs using standardized recipes.
  • Develop creative menus considering budget guidelines and safe practices.
  • Ensure the kitchen is clean and sanitary at all times.
  • Coordinate the work/lunch breaks for the function for timely food service and catering completion.
  • Manage inventory, ensure sufficient production and supply according to business levels and practice effective waste management.
  • Liaise effectively with HLG (Headwater Learning Group) Members, students and guests including sales and delivery contacts.
  • Liaise with facilities to address any repair and maintenance needs to offer safe and well-maintained workplace.
  • Address any equipment concerns or needs in a timely and effective fashion according to the existing protocols.
  • Manage service contracts, relationships with vendors, LunchTime school payment portal management and parent and internal communications.

Strategic Planning:

  • Prepare and adhere to annual budget as per Calgary Academy’s processes.
  • Develop strategic plans for improvements of food quality, processes or budgetary efficiencies within the function.
  • Collaborate/innovate/develop processes, efficiencies and ways to improve day-to-day operations of the Café.

Customer Care:

  • Ensure the quality of food and food sensitivity are accommodated through clear and consistent communication.
  • Maintain proper temperatures of food and follow food safety and hygiene guidelines.
  • Provide suggestions to accommodate catering requests for special events, clarify expectations and ensure quality and timeliness of services.
  • Receive and manage constructive feedback effectively with regards to food quality and operations, ensure excellent customer care at all times.

Innovation:

  • Demonstrate innovation through fostering creativity, adopting new practices and technologies, modernization, research, and partnerships.
  • Create an environment that fosters creativity, agility and innovative ideas and remove barriers that stifle the innovation spirit.

Candidate Profile

The successful candidate will have the following:

Education         

  • Provincial Culinary Apprenticeship
  • Federal Journeyman/Red Seal Accreditation
  • Levels 1 and 2 Food Safe

Experience

  • Minimum six years experience in related production business – restaurant, cafeteria, institutional, banquets
  • Demonstrated ability to work closely with an executive leadership team and capacity to build relationships with internal and external stakeholders
  • Proficiency in email communication, Microsoft Office Suite
  • Ability to multi-task and work under pressure
  • Excellent communication skills – written and verbal
  • Time management and organizational skills
  • Experience with LunchTime payment portal, or related software is considered an asset
