The Opportunity
Reports to:Single Co-Owner
Direct Reports:Culinary Team: Approx. 16 (Kitchen Leads and Lines Cooks)
Location:Edmonton, AB
Working Hours:Typical work hours for this position are 40-50 hours per week. (65% days, 35% evenings)

 

Mandate

Reporting to the Owner, the Corporate Chef will be responsible for implementing and following culinary standards and overseeing the culinary operations of On the Rocks Edmonton and The Cabin Pub + Party. As well as being responsible for supervising all kitchen functions including food purchasing, preparation, and maintenance of quality standards; sanitation and cleanliness regarding both operations.

 

Key Accountabilities

The position will include the following responsibilities:

  • Manage day-to-day kitchen operations and culinary team;
  • Execution of daily food service, quality, technique, portion, presentation and food cost control;
  • Create new dishes, update and plan menus that include prices, layouts, descriptions and food images;
  • Consult with the establishment’s owner to approve menu changes, supplier agreements and budget allowances;
  • Track food costs while managing vendors;
  • Stay current on trends in the restaurant and food service industry;
  • Estimate food consumption and requisition of food purchase;
  • Standardize production recipes to ensure consistent quality;
  • Responsible for continued growth of overall catering: cost, quality, presentation and innovation;
  • Execute all on-site and off-site Catering;
  • Collaborate with General Managers on expense tracking for accurate financial projections;
  • Responsible for all the kitchen purchasing;
  • Ensure that appropriate sanitation, maintenance and Food Safety Standards are followed;
  • Implement and maintain culinary excellence standards;
  • Train and manage kitchen personnel and supervise all culinary activities.

 

First Year Deliverables / Measures of Success

Success in the first year will be determined by the candidate’s ability to:

  • Gain a high level of organizational familiarity and gain a strong understanding of customer needs;
  • Conduct a full audit of food costs;
  • Review historic menu items and create menu changes.

 

Candidate Profile

The successful candidate will have the following:

  • At least 5 years’ experience in a similar capacity;
  • Red Seal certification would be an asset;
  • The ability to manage in a diverse environment with a focus on customer service;
  • Excellent written and verbal communication skills;
  • Ability to multi-task and work under pressure with strong organizational and time management skills;
  • Be able to reach, bend, stoop and frequently lift up to 50 pounds;
  • Proficiency in email communication, Microsoft Office Suite.
